chore: add metadata and mkdocs-simple-plugin version requirements
Some checks failed
continuous-integration/drone/push Build is failing

Also update installation instructions now that pip can get simple
  from pip rather than by cloning. Should be ready for submission to PyPI.

  Resolves #7.
